About
About
Northgrain Bakehouse is an artisan micro‑bakery in Fort Wayne, Indiana, shaped by long fermentation, honest ingredients, and a deep respect for traditional craft. We bake with just a few simple elements — flour, salt, and water — and build flavor through time, patience, and intention. Our breads are hand‑crafted over one or two days using organic flour and wholesome additions like nuts, seeds, grains, herbs, and fruit.
We currently operate as a cottage bakery, baking everything on our hearth micro‑bakery oven — the Rackmaster RM 2020, a UK‑designed and built oven known for its consistency and quiet excellence.
Northgrain’s journey began long before our first market day. Over four part‑time years, we matured our starter (name tbd), studied the work of great artisan bakers, and baked more than a few imperfect loaves. In February 2025, we stepped into the YLNI Indoor Farmer’s Market with a small menu and a commitment to real craft.
Today, at the YLNI Market on Barr Street, customers can find our breads, pastries, and seasonal offerings — all made with local, organic, and ethically sourced ingredients whenever possible. Supporting local farmers and producers is central to how we operate and how we grow.
Why Northgrain
Northgrain began with a simple belief: good baking is intentional. It’s slow fermentation, honest ingredients, and the kind of care that feels familiar the moment you taste it. Our craft is rooted in heritage — in the kitchens we live in and grew up in, the fields and experiences that shaped our sense of place, and the people who taught us that food is a way of showing up for others.
And that place is Fort Wayne. This city has always been a crossroads — of grain, of industry, of people who build things with their hands and their heads. It’s a community that values substance over noise, and that spirit is woven into everything we make. Northgrain is local not just in geography, but in character: steady, hardworking, quietly excellent.
But our story also reaches beyond the region. Before building this bakehouse, we spent years leading teams, building brands, and navigating industries where precision, clarity, and smart systems weren’t optional — they were essential. That experience didn’t replace our love for craft; it refined it. It taught us how to build processes that are steady, scalable, and quietly sophisticated. It taught us how to blend intuition with data, tradition with modern capability, and soul with structure.
We carry that fluency into everything we make. You’ll taste it in the way our starters develop flavor. You’ll see it in the consistency of our crumb, our lamination, our fruit‑forward scones. You’ll feel it in the way our bakehouse operates — thoughtful, disciplined, and built with the kind of intelligence that keeps a bakery resilient.
Northgrain is grounded, but not provincial. Heritage‑forward, but not nostalgic. A bakehouse shaped by real craft, real‑world experience, and a real connection to the place we call home.
This is Northgrain.
